I’m working with local suppliers, buying the very best of raw ingredients, that’s what people want now and we’re really lucky in Sligo to have such great produce on our doorstep.’

The new menus are not only going down well with the customers, culinary accolades have also been flowing, at So Sligo Food & Culture Festival 2013, the hotel scooped Best Restaurant Overall Award for The Kitchen Restaurant, Best Overall Chef Award for Alan Ftizmaurice.
