Chef Alan Fitzmaurice
Alan Fitzmaurice joined the team at The Glasshouse in 2012, he is well known to Sligo diners, he has worked previously at the Waterfront Restaurant in Rosses Point where he won a series of accolades like the Moreau Chablis Fish Dish of the Year. He then moved to Castle Dargan and from there to Source where they picked up Best New Establishment award at the National Hospitality Awards in 2011. Alan is also a member of the Irish Culinary Team that won a silver medal at the Culinary Olympics in Germany.
In 2014 Alan was part of the North West Culinary Team that participated at Hotelympia in London and won 13 Bronze and 1 Gold Award. Hot on the heels of the London success Alan competed against a distingushed group of his peers in the West of Ireland to recreate the Nobel Prize Dinner that would have been served when W B Yeats won the Nobel Prize for Literature, the meal was attended by the Indian Ambassador on June 12th 2014, the eve of Yeat's birthday.
Alan says of his new approach at The Kitchen ‘The new menus take classic dishes that have been around for a long time, and then add a new twist, I think that suits the hotel, its quirky and unique. I’m working with local suppliers, buying the very best of raw ingredients, that’s what people want now and we’re really lucky in Sligo to have such great produce on our doorstep.’
The new menus are not only going down well with the customers, culinary accolades have also been flowing, at So Sligo Food & Culture Festival 2013, the hotel scooped Best Restaurant Overall Award for The Kitchen Restaurant, Best Overall Chef Award for Alan Ftizmaurice and Overall Customer Care & Service Award of Excellence for Alan Moore from The Kitchen Food & Beverage team.
